Crispy Idli Tikka: Leftovers to super-dupers

Isn’t idli a quite common breakfast recipe at almost every household? And in that case there is always some amount of it leftover waiting for someone to savor it. Here is a unique and tasty recipe that you can make with the leftover idli instead of throwing it away. In fact you will want to make extra idlis the next time to delight yourself with this super yummy dish. This fried idli tikka are a perfect snack for literally any occasion. This recipe is ideal to be served as an appetizer before any meal or just as an evening snack to crunch down your hunger and is a great way to make use of those leftover idlis. Let’s now jump to the recipe!

In a skillet heat some oil and add a spoon of jeera. Once it sputters add a spoon of ginger & garlic paste, finely chopped green chilies, carrots, cabbage, fresh peas, and capsicum. Saute the veggies with a pinch of salts, pepper powder, garam masala, fennel powder, and coriander powder. Add a spoon of tomato ketchup and soya sauce to the vegetable mixture. Make sure the veggies are crunchy like the way it is for fried rice. 

Crumble the idlis and add the previously prepared veggie hotchpotch, finely chopped onions, coriander leaves, mint leaves, and a sprinkle of lemon to it. Optionally, you can also add freshly grated paneer or mashed boiled potatoes to this mixture. Now gently knead the mixture to bring it to a soft dough like consistency. Make sure you are gentle enough with the dough; else it will get very hard. 

Now take a bit of the mixture and make small tikkis out of it. Heat some oil in a skillet and shallow fry each tikki till golden brown and crispy. You can also spray some oil and air fry the tikkis if you want to cut down on calories. Top it with a lavish sprinkle of chaat masala for added extra tanginess. There you go for another crispy and tasty recipe with just the leftover idlis. Serve it hot with green chutney or tomato ketchup or any dip of your choice or just with a hot cup of tea as an evening snack.
