The Best Set Dosa Recipe Using Parboiled Rice

Some would say it’s a hybrid between an idly and dosa. Either way, we all can agree that it tastes delicious. It is also fun and easy to make. How to make the best Set Dosas at home

Firstly, get all your ingredients together:

  • ½ cup AMK parboiled idly/dosa rice
  • ½ cup raw rice
  • ¼ cup urad dal
  • ½ tsp fenugreek seeds
  • Salt to taste

Thoroughly wash and soak the different rice, dal, and fenugreek seeds in a deep bowl with enough water. Let it soak for 4 hours. Once soaked, drain the water and blend the grains in a wet grinder with 1 cup water for a pourable consistency (Use a wet grinder instead of a food processor for the best results).

Once blended, add salt and mix the batter well. Cover the batter and place it at an ambiently warm temperature to ferment overnight or for 12 hours. The next day after the batter has been fermented, heat an iron skillet and grease it with an oil of your choice. Pour the batter and make a small dosa of around 5 inches in diameter. Remember not to make the dosa too thin, therefore, keep the diameter small. Cook the dosa until golden brown on one side, then flip it. Serve hot with sambar and chutney!
